Instructions
1. Use the back of a knife to tenderize the pork, then crack the egg into a bowl and beat it. Wash the pork and slice it, then coat the slices with the beaten egg, sprinkle with MSG, mix well, and marinate for 5 minutes. Dust with dry cornstarch.
2. Heat 1 tablespoon of oil in a wok, add the pork coated with dry starch, and pan-fry until both sides are golden brown. Then add 450 g (about 1 lb) of oil, heat to 60% hot (about 350°F/175°C), remove the wok from the heat, and let the pork steep in the hot oil for 1 minute.
3. Heat another wok, add 0.5 tablespoon of peanut oil, splash in rice wine, then add fruit juice, sesame oil, and the deep-fried meat slices, quickly stir-fry a few times and serve. This dish has a rich fruity aroma.
