Ingredients
275 g (about 10 oz) fresh shrimp, 40 g (about 1/3 cup) all-purpose flour.
Seasonings
40 g MSG (monosodium glutamate) and salt to taste.
Instructions
1. Remove the heads, tails, and shells from the shrimp, wash them with salt, then wrap in a clean white cloth and squeeze out excess moisture. Spread a clean paper on the work surface, place the shrimp meat on it, and squeeze out any remaining moisture. Add MSG, salt, and flour, knead until soft and fluffy, then refrigerate for one hour before removing.
2. Form the shrimp meat into balls and cook them in boiling water, making sure the water does not come to a rolling boil or the shrimp balls will become tough. Once the shrimp balls float to the surface, remove them immediately and place them into a bowl of fresh broth. This dish is white in color, with a fresh, tender, and crisp texture, suitable for all seasons.
