Sour and Spicy Shrimp Omelet

Ingredients

160 g (about 5.6 oz) shrimp, 1 shallot, 1 scallion, 2 garlic cloves, 4 eggs.

Seasonings

Salt 1/3 teaspoon, pepper and sesame oil to taste, cornstarch 1/2 teaspoon, egg white 1 tablespoon.

Sauce

Sour and spicy sauce 1/4 cup, water 1/2 cup, sugar and cornstarch 1/2 teaspoon each, light soy sauce 1 teaspoon.

Instructions

1. Devein the shrimp, rinse and pat dry, then mix with the marinade and let sit for 20 minutes; slice the onion into strips; cut the scallions into sections; mince the garlic; beat the eggs with the seasonings until well combined.

2. Heat 2 tablespoons of oil in a pan, pour in the beaten eggs and stir-fry until set, then reduce to medium-low heat and cook until both sides are golden brown, remove and serve.

3. Heat 2 tablespoons of oil again, stir-fry the shrimp until cooked, then add the onion, garlic, and scallions, stir-frying until fragrant. Finally, pour in the prepared sauce, bring to a boil, and pour over the baked egg to serve.
