Vegetarian Braised "Goose" (Bean Curd Skin Roll)

Ingredients

2 sheets of tofu skin, 500 g (about 1 lb) white glutinous rice, 100 g (about 3.5 oz) each of red dates, golden coin cookies (or candied winter melon coins), and candied winter melon.

Seasonings

200 g (about 1 cup) white sugar, 250 g (about 1 cup) peanut oil, and sesame oil to taste.

Instructions

1. Rinse the white glutinous rice, soak for 1 hour, then drain. Bring water to a boil in a pot, place the rice in a steamer and steam for 1 hour until cooked through. Remove the cooked glutinous rice and set aside.

2. Mix the red dates, golden coin cakes (sweet winter melon pastries), candied winter melon, sugar, sesame seeds, sesame oil, and glutinous rice together until well combined; lay a sheet of tofu skin flat on a cutting board, spread the mixture evenly over it, roll it up into a long log, deep-fry in hot oil until golden and cooked through, remove from the pan, cut into square pieces, and arrange on a serving plate. This dish has a light beige color, resembles braised goose in appearance, and has an enticing, aromatic flavor.
