Ingredients
Cilantro 100 g (about 3.5 oz), beef short ribs 500 g (about 1 lb), clear broth 800 g (about 3.5 cups).
Seasonings
25 g scallion segments, 25 g ginger pieces, 2 g star anise, 20 g Shaoxing wine, 3 g salt, 1 g MSG, 10 g sesame oil.
Instructions
1. Wash the cilantro and cut into sections; cut the beef short ribs into chunks, bring water to a boil in a pot, add the beef and blanch until cooked through, then remove.
2. Add fresh broth to the pot, then add scallion sections, ginger (lightly smashed), star anise, Shaoxing wine, and the beef. Bring to a boil over high heat, skim off any foam, then simmer until the beef is tender and fully cooked. Remove the seasonings, add salt and cilantro, and bring to a boil once more. Transfer to a bowl and drizzle with sesame oil. This dish features a clear, flavorful broth, tender beef, and the refreshing fragrance of cilantro.
