100 g ginger (sliced), 100 g scallions (sliced), 25 g fennel seeds, salt, soy sauce, and spices to taste.
Instructions
1. Rinse the duck clean, rub salt thoroughly all over the duck, and place it in a container to marinate for 4 hours, turning the duck once halfway through.
2. Blanch the duck in boiling water until the skin tightens, then hang it in a drafty place and wipe off any loose skin.
3. Place 4 thin metal rods on the rack of the smoker, set the duck breast-side down on top, smoke for 5 minutes, then flip and smoke for another 5 minutes.
4. Place star anise, spices, soy sauce, scallions, and ginger pieces in a large pot. Bring to a boil, then add the duck and braise for 45 minutes. Remove the duck, chop into pieces, and arrange on a serving plate. This dish has a golden, glossy appearance and a delicious, savory flavor.
