Braised Pork with Hidden Pearls

Ingredients

Pork 1000-1500 g (about 2-3 lbs), shelled chestnuts 300 g (about 10 oz).

Seasonings

Vegetable oil and soy sauce, to taste.

Instructions

1. Cut the pork into chunks; remove the shells and inner skins from the chestnuts, then split each in half.

2. Heat the wok, add vegetable oil and sauté scallions until fragrant, then add chestnuts and pork, stir-frying briefly. Add enough water and soy sauce, bring to a boil, then reduce to a simmer and cook until tender.
