Ginger and Scallion Crab

Ingredients

1000 g (about 2.2 lbs) of crab.

Seasonings

750 g (about 1 1/2 lb) peanut oil, 25 g oyster sauce, 15 g cooking wine, 2.5 g each salt, MSG, scallion, minced ginger, cornstarch, and aromatic vinegar, 0.1 g white pepper.

Instructions

1. In a bowl, combine clear broth, salt, MSG (or omit), white pepper, scallions, ginger, garlic, cornstarch, sesame oil, and oyster sauce to make a sauce; set aside. Clean the crab, remove the shell, and cut into pieces.

2. Add the crabs to hot oil over high heat and fry briefly, then remove from the pan.

Leave a little oil in the wok, add the scallion white sections and stir-fry until fragrant, then add the crab and splash in the cooking wine, quickly cover the wok for a moment, pour in the prepared sauce, toss everything together until well coated, then serve immediately.
