Huangpu Scrambled Eggs

Ingredients

250 g (about 5 large) eggs, shelled.

Seasonings

350 g (about 12.5 oz) lard, 2 teaspoons salt, 1 teaspoon MSG.

Instructions

1. Beat the eggs with MSG, salt, and lard until well combined into an egg mixture.

2. Wash the wok clean and place over medium heat. Swirl in oil to coat the wok, then pour the excess oil back into the oil container. Add half a tablespoon of fresh oil, pour in the beaten egg mixture, and stir and scramble while drizzling in more oil until just cooked. Transfer to a plate. This dish is tender, smooth, and fragrant.
