Ingredients
700 g (about 1.5 lbs) chicken breast, 100 g lettuce, 1 egg.
Seasonings
1000 g (about 2.2 lbs) oil, 200 g sweet potato starch, 25 g each sugar and rice wine, 15 g each Sichuan pepper salt, soy sauce, and scallions, 10 g garlic, 5 g each salt and ginger, 1 g each white pepper and MSG.
Instructions
1. Rinse the chicken breast and cut into small pieces. In a bowl, combine soy sauce, sugar, salt, cooking wine, white pepper, egg, scallion, ginger, garlic, and MSG, stirring well. Add the chicken pieces and marinate for 10 minutes.
2. Dip each marinated chicken piece in sweet potato starch and set aside. Heat oil, add the coated chicken pieces, and deep-fry over medium heat until golden brown. Drain and arrange on a plate lined with lettuce. Serve with pepper-salt dipping mix. The finished dish is crispy on the outside, tender on the inside, savory, and richly aromatic.
