Oyster Sauce Duck Feet

Ingredients

500 g (about 1 lb) duck feet.

Seasonings

Seasonings: 12.5 g oyster sauce, aged tangerine peel, star anise, MSG, vegetable oil, water chestnut starch, and chicken broth, all to taste.

Instructions

1. Trim the toenails off the duck feet, blanch them in boiling water, remove, peel off the outer skin, and rinse clean.

2. Cut the dried tangerine peel into small pieces and the star anise into small bits. Place them in a pot along with the oyster sauce and duck feet, add enough chicken broth to cover, and braise over low heat for about 1 hour. Add MSG, then just before removing from heat, discard the tangerine peel and star anise, take out the duck feet, and arrange them on a serving plate.

3. Use the braising liquid from the pot to mix with a little cornstarch to make a slurry, then pour it over the duck feet. Finally, drizzle a bit of raw oil on top and serve.
