Ingredients
1 whole rooster (about 3-4 lbs)
Seasonings
Salt, pepper, onion, garlic, curry paste, bay leaves, sugar, and fruit to taste.
Instructions
1. Cut the rooster into pieces, season with pepper and salt, then pan-fry in oil until golden brown. Transfer to another pot.
2. Sauté the minced onion, minced garlic, and curry paste until golden brown, then add water, bay leaves, and sugar, stirring to combine. Immediately add the chicken pieces to the pot, adjust the seasoning, and stir in finely diced peeled fruit. Bring to a boil, then remove from heat and serve.
