Ingredients
500 g (about 1 lb) rice noodles, 150 g (about 5 oz) shrimp, 150 g (about 5 oz) Chinese chives (cut into short segments), 100 g (about 3.5 oz) bean sprouts, 2 duck eggs (beaten).
Seasonings
3 tablespoons oil, salt to taste.
Instructions
1. Wash the bean sprouts and drain them well; loosen the rice noodles.
2. Add oil, stir-fry bean sprouts briefly, then add rice noodles and stir well. Add duck eggs and cook through, then add seasonings and stir to combine. Finally, add shrimp, chives, and salt, stir-fry until well mixed, then remove from heat and serve.
