Ingredients

1000 g (about 2.2 lbs) live periwinkles or sea snails

Seasonings

Garlic, vegetable oil, sugar, MSG, and sesame oil, each to taste.

Instructions

1. Wash the yellow snails, blanch them in a pot of 80°C (176°F) hot water, remove and use a bamboo skewer to pick out the snail meat, then wash off any impurities, especially the mud residue on the snail heads.

2. Bring water to a boil, blanch the cleaned snail meat briefly, then transfer to a bowl. Mix in minced garlic and all seasonings, toss well, and plate. This dish preserves the natural flavors and is deliciously fresh.
