Braised Beef Head

Ingredients

1 whole beef head, chicken stock as needed.

Seasonings

20 g soy sauce, 5 g white pepper, 10 g sugar, and MSG, salt, sesame oil, water starch, and oil to taste.

Instructions

1. Boil the beef head in water until cooked, then remove the bones, wipe it clean with a cloth, and coat with sugar caramel color. Heat oil in a wok, deep-fry the beef head meat until golden brown, then remove and drain.

2. Steam the deep-fried beef head meat with seasonings for about 25 minutes, then cut into pieces and steam again with additional seasonings to infuse flavor.

3. Add chicken broth to the pan, place the beef head meat in and braise for 10 minutes, then transfer the meat to a serving plate; thicken the remaining broth with a water slurry, drizzle with sesame oil, and pour over the beef head meat to finish. This dish is tender and succulent, with a rich and savory flavor.
