Braised Yellow Croaker with Preserved Mustard Greens

Ingredients

1 yellow croaker (about 750 g / 1.5 lbs), 200 g soft tofu, 150 g pickled mustard greens, 1000 g chicken broth, 2 g cilantro.

Seasonings

5 g scallions, 3 g MSG, 2 g each salt and white pepper, sesame oil and oil as needed.

Instructions

1. Clean the yellow croaker, remove the innards, and score both sides with willow-leaf-shaped cuts; cut the scallions into small horseshoe-shaped sections; cut the pickled mustard greens into segments and blanch them briefly in water; cut the tofu into small flat square pieces.

2. Heat oil in a wok, deep-fry the yellow croaker until golden brown and remove. In another pot, add chicken broth, seasonings, tofu cubes, the fried fish, and chopped preserved mustard greens. Bring to a boil, then reduce to low heat and simmer for about 15 minutes. Just before serving, add white pepper, drizzle with sesame oil, and garnish with cilantro. This dish combines animal and plant proteins for a well-rounded, nutritious meal.
