Ingredients

Dog meat, soft-shelled turtle, and water, each to taste.

Seasonings

Peanut oil, rice wine, fine salt, scallions, ginger, soy sauce, sugar, star anise, and Sichuan peppercorns, each to taste.

Instructions

1. Slaughter and clean the turtle, cut the dog meat into small pieces, then marinate with wine, salt, scallions, and ginger for 2 hours.

2. Blanch the softshell turtle in boiling water briefly, then rinse clean. Heat a wok over high heat, add peanut oil, and once hot, first stir-fry scallions and ginger until fragrant. Then add the dog meat and turtle pieces, stir-fry briefly, then add wine, soy sauce, salt, sugar, star anise, and Sichuan peppercorns. Add enough water to braise until half-cooked, then transfer everything to a large clay pot lined with a bamboo mat and bring to a boil.

3. Bring to a boil, then reduce to low heat and simmer until the meat is tender and falls apart, and the sauce is rich and thick. This dish has a deep red color, a rich aroma, and the dog meat is tender and fully infused with flavor.
