Saucy Braised Pork Ribs

Ingredients

1000 g (about 2.2 lbs) pork spare ribs.

Seasonings

30 g soy sauce, 50 g sugar, 25 g Shaoxing wine, 10 g each of MSG, salt, scallions, and ginger, 5 g each of star anise and cinnamon bark.

Instructions

Place the marinated ribs in a pot of boiling water to blanch, then rinse clean. Line the bottom of a pot with a bamboo mat, arrange the ribs neatly on top, and add Shaoxing wine, star anise, cinnamon, scallions, ginger, and water. Bring to a boil over high heat, then add sugar and soy sauce, cover the pot, and cook over medium heat until the sauce thickens. When serving, cut the ribs into pieces, arrange on a plate, and pour the original sauce over the top. This dish has a glossy red-brown color, tender and succulent meat, and a rich, aromatic fragrance.
