Stir-Fried Shrimp with Silky Sauce

Ingredients

600 g (about 1.3 lbs) shelled shrimp

Seasonings

50 g oil, 20 g scallion, 6 g salt, 5 g cooking wine, 2 g each ginger and white pepper, 1 g sesame oil, and a pinch of MSG (optional).

Instructions

1. Rinse the shrimp in salted water, gently scrubbing them, then wash again with fresh water and drain thoroughly.

2. Drain the shrimp, then marinate with salt, rice wine, white pepper, egg white, and cornstarch for 10 minutes. Meanwhile, cut the scallion into sections and slice the ginger; set aside.

3. Once the oil is warm, add the shrimp and remove them as soon as they change color. In a separate pan with fresh oil, add scallion segments, ginger slices, and the shrimp in order. Quickly season with salt, MSG (optional), sesame oil, and white pepper, and stir-fry a few times before serving. This dish has an elegant, simple color and the shrimp are smooth, tender, and crisp.
