Wuxi-Style Pork Ribs

Ingredients

Water and pork ribs, as needed.

Seasonings

Salt, Shaoxing wine, scallions, ginger, star anise, cinnamon, soy sauce, and sugar, each to taste.

Instructions

1. Cut the pork ribs into small pieces, mix with salt and a small amount of saltpeter, then place in a container to marinate for about 10 hours. Remove the ribs, put them in a pot, add water, and bring to a boil.

2. After bringing to a boil, remove and rinse clean. Wash the pot, line the bottom with a bamboo rack, and place the ribs and square pork inside. Add an appropriate amount of Shaoxing wine, scallions, ginger, star anise, cinnamon, and water. Bring to a boil over high heat, then add soy sauce and sugar. Reduce to medium-low heat and braise for 1 hour until the ribs are tender and falling off the bone, and the sauce is thick and fragrant. When serving, remove, cut into pieces, plate, and drizzle with the braising sauce. This dish features a rich, dark sauce and meat so tender it falls off the bone.
