How to Cut Roll-Cut Pieces

Master the roll-cut technique for carrots and more with this easy guide.

Roll-cut, as the name suggests, is a cutting technique where you roll the ingredient as you cut it. This cut is ideal for ingredients used in braised or stewed dishes.

Step 1: Wash and peel the carrot, then cut diagonally from one side to make the first cut (see images 1 and 2).

Step 2: Turn the carrot toward you (this rolling motion is called "rolling," as shown in Image 3), then with the cut side facing up, make a diagonal cut straight down (Image 4).

Step 3: Then rotate the carrot toward you and make another cut (Figure 5), repeating this process to continue cutting (Figures 6 and 7).
