Ingredients
500 g (about 1 lb) pork hind leg (with skin), 100 g Chinese toon sprouts (young leaves).
Seasonings
20 g premium soy sauce, 15 g sugar, 10 g each chili oil and minced garlic, 5 g sesame oil, 2 g salt, and 1 g MSG.
Instructions
1. Scrape and wash the pork clean, then cook it in a soup pot until done. Remove and soak in the hot broth for 10 minutes, then take it out, pat dry, and cut into strips about 6 cm (2.5 inches) long. Arrange on a plate.
2. Wash the Chinese toon shoots, place them in a bowl, and briefly steep with boiling water. Remove, discard the stems, and finely chop. In a bowl, combine soy sauce, sugar, chili oil, sesame oil, MSG, minced garlic, and salt to make a dressing. Pour the dressing over the shredded pork, then sprinkle with the chopped toon shoots. This dish is vibrant in color with a rich, savory flavor and a slight spicy kick.
