Ingredients
150 g bitter almonds, 9 g agar-agar.
Seasonings
60 g each of white sugar and cream, along with candied osmanthus, jackfruit, mandarin oranges, and cold sweet soup to taste.
Instructions
1. Place bitter almonds in enough water and grind them together with the water into an almond paste.
2. Wash the pot clean, add 150 g (about 2/3 cup) of ice water and the agar-agar, place over heat and cook until the agar-agar dissolves in the water, then add white sugar and stir well, next add the almond paste and mix thoroughly, then add cream and stir to combine, bring to a gentle simmer, remove from heat and pour into a dish, let cool, then refrigerate until set into a block, which is the almond tofu.
3. Cut into diamond-shaped pieces with a knife, place in a bowl, sprinkle with osmanthus flowers, top with jackfruit and mandarin oranges, then pour over cold sweet soup or soda water before serving. This dish helps clear the lungs, expel phlegm, and relieve coughing and wheezing.
