Merit and Virtue Tofu

Ingredients

250 g (about 9 oz) soft tofu, 10 dried shiitake mushrooms (about 50 g / 2 oz), 10 button mushrooms (about 5 g), 12 green cherries and 12 shiitake mushrooms, and vegetable broth as needed.

Seasonings

Soy sauce, cooking wine, sugar, MSG, and salt, each to taste.

Instructions

1. Cut the tofu into round shapes; wash the shiitake mushrooms; trim the stems off the mushrooms; cut the cherries in half.

2. Deep-fry the tofu in oil heated to about 70% hot (350°F/175°C) until golden brown, then add soy sauce, cooking wine, sugar, MSG, salt, and vegetable broth, and simmer until the flavors are absorbed.

3. Once the broth has thickened, stir in a cornstarch slurry to thicken further, then arrange the mixture on top of the tofu—first the shiitake mushrooms, then the button mushrooms, and finally the cherries on top to finish.
