Oyster Sauce Lettuce

Ingredients

600 g (about 1 1/4 lbs) lettuce

Seasonings

30 g oyster sauce, 60 g vegetable oil, 10 g each soy sauce, sugar, ground white pepper, and water starch, 20 g cooking wine, 1 g salt, 3 g each MSG and minced garlic, 5 g sesame oil, and broth as needed.

Instructions

1. Remove any wilted outer leaves from the lettuce and wash thoroughly. Bring a pot of water to a boil, add salt, sugar, and oil, then blanch the lettuce, turning it once, drain immediately, press out excess water, and arrange on a plate.

2. Heat oil in a wok, add garlic and stir-fry briefly, then add oyster sauce, cooking wine, ground white pepper, sugar, MSG, soy sauce, and broth. Once it comes to a boil, thicken with a cornstarch slurry, drizzle with sesame oil, and pour the sauce over the lettuce.
