Ingredients
500 g winter melon (about 1 lb), 1 tablespoon green peas, 2 tablespoons finely diced carrot, 150 g (about 5 oz) minced pork, 1 can clear chicken broth, 2 cups water.
Seasonings
1 tablespoon cornstarch, and salt, sesame oil, and white pepper to taste.
Instructions
1. Peel the winter melon, then grate it into shreds. Place the shredded melon and its juices into a pot. Marinate the unwashed pork with seasonings for 10 minutes.
2. Bring the clear chicken stock, water, and minced winter melon to a boil, then add the green peas, minced carrot, and ground pork, bring to a boil again, stir in the cornstarch slurry to thicken into a soup, and season with salt, sesame oil, and white pepper.
