Ingredients
Green bell pepper, egg white, pickled red chili pepper, stock, mandarin fish, and pine nuts, each to taste.
Seasonings
Salt, cooking wine, cornstarch, MSG, white pepper, peanut oil, sugar, and minced ginger, each to taste.
Instructions
1. Cut the fish into kernels the size of mung beans; fry the pine nuts in warm oil until cooked; heat oil in a wok, add the fish kernels and gently stir to separate.
2. Return the wok to the heat, add peanut oil, and stir-fry the minced ginger. Then add the diced fish and pine nuts, stir-frying until well combined. Season with the prepared sauce mixture and cook until heated through, then plate and serve. This dish features tender, fresh fish and crispy, fragrant pine nuts.
