Wensi Tofu (Silken Tofu in Broth)

Tofu, clear broth, chicken broth, ham shreds, vegetable shreds, bamboo shoot shreds, and shiitake mushroom shreds, each to taste.

Seasonings

Salt, MSG, and chicken fat, each to taste.

Instructions

1. Cut the tofu into thin shreds, then briefly blanch in boiling water to remove the bean flavor.

2. Add clear chicken broth and additional clear soup to a wok, then add the shredded tofu, bamboo shoots, and shiitake mushrooms. Bring to a boil, skim off any foam, then season with salt and MSG. Add the shredded ham and vegetable shreds, briefly simmer, then pour everything into a soup bowl. Drizzle with chicken fat and serve. This dish features a beautiful white-and-green color contrast, with the tofu being silky and tender.
