Ingredients
1000 g (about 2.2 lbs) fresh dog meat.
Seasonings
75 g vegetable oil, 50 g each of cooking wine and soy sauce, 25 g each of scallions and garlic cloves, 20 g salt, 15 g each of dried red chili peppers and ginger, 10 g toasted sesame powder, and 2 g MSG.
Instructions
1. Peel and wash the scallions, then cut into sections; peel and crush the garlic into a paste; peel and wash the ginger, then slice thinly; wash the chili peppers, remove the stems, and cut into sections, set aside; soak the dog meat in clean water for a full day, set aside.
2. After soaking, remove the dog meat, wash it, drain, and chop into 3 cm (about 1-inch) cubes. Place in a pot, add enough fresh water to cover the meat, bring to a boil, then remove and rinse three times with clean water, draining well.
3. Heat oil in a wok or pan over high heat, add the dog meat and stir-fry for 4 minutes, then splash in cooking wine and soy sauce; once the liquid has evaporated, add scallion segments, chili threads, and water, then simmer over low heat until the meat is tender; season with salt, minced garlic, and MSG, bring to a boil, then transfer to a bowl, sprinkle with toasted sesame seeds, and serve hot. This dish features a rich, flavorful sauce with a spicy kick and tender, succulent meat.
