Dried Shrimp with Cauliflower

Ingredients

400 g (about 14 oz) cauliflower, 2 tablespoons dried shrimp.

Seasonings

2 tablespoons salt, 2 tablespoons sesame oil, and a pinch of MSG (or to taste).

Instructions

1. Trim the roots and leaves from the cauliflower, then wash the entire head thoroughly.

2. Take a bowl, add some water and 1 tablespoon of salt, then soak the cauliflower in the salted water for 10 minutes. Remove, rinse under fresh water, and cut into small florets. Blanch in boiling water until tender, then drain, let cool, and place in a dish. Add salt and MSG to taste, toss well, and marinate for 10 minutes.

3. Wash the dried shrimp, soak them in hot water until softened, then finely chop them and sprinkle over the cauliflower. Drizzle with sesame oil and serve. This dish features white cauliflower with a fresh, savory flavor that is light and refreshing.
