Ingredients
1 turtle (about 500 g / 1 lb), 5 g Sichuan fritillary bulb, 1000 g (about 4 cups) chicken broth.
Seasonings
Seasonings: cooking wine, salt, Sichuan peppercorns, ginger, and scallions, all to taste.
Instructions
1. Kill the soft-shelled turtle and clean it thoroughly.
2. Cut the turtle into pieces and place in a steaming bowl. Add chicken broth, Sichuan fritillary bulbs, salt, cooking wine, Sichuan peppercorns, ginger, and scallions. Steam in a steamer for 1 hour until done.
