Tea-Scented Ribs

Ingredients

640 g (about 1.4 lbs) pork spare ribs, 3 slices ginger, a little bit of shallot pieces and a little bit of shallot paste.

Seasonings

4 black tea bags, 1 tablespoon each light soy sauce and dark soy sauce, 3 star anise, 1/8 lemon peel.

Instructions

1. Cut the pork ribs into long strips, wash them clean, pat dry with paper towels, then marinate briefly with minced shallots and ginger slices before setting aside.

2. Heat 1 tablespoon of oil and sauté the dried shallots until fragrant, then add 3 cups of water and the seasonings, bring to a boil, add the pork ribs, cook over medium heat for about 7 minutes, turn off the heat and let them soak for another 30 minutes, then remove and drain, set aside.

3. Heat 3 cups of oil in a wok until boiling, then add the ribs and deep-fry until golden brown.
