Yunnan-style Pig Trotters

Ingredients

Pig trotters and water, both to taste.

Seasonings

White vinegar, sugar, and fine salt, each to taste.

Instructions

1. Clean the pig trotters thoroughly, removing any hair and nails, then boil them in boiling water for about 30 minutes. Rinse under cold running water for about 1 hour, then split and cut into pieces, each about 25 g. Wash again, boil in fresh boiling water for about 20 minutes, remove, and rinse under cold running water for another hour. Finally, boil in fresh boiling water for 20 minutes until about 60% tender, remove, let cool, and arrange on a plate.

2. Bring the white vinegar to a boil, add sugar and salt, and cook until dissolved. Strain the liquid, let it cool, then pour into a bowl. Submerge the pork trotter pieces in the liquid for 6 hours, serving as desired. This dish features tender meat that easily separates from the bone, with skin that is refreshingly firm and smooth, neither fatty nor greasy, offering a delightful sweet and sour flavor.
