Cold Spinach Salad

Ingredients

500 g (about 1 lb) spinach, 50 g (about 1/3 cup) peanuts.

Seasonings

Salt, vinegar, sugar, and sesame oil, each to taste.

Instructions

1. Wash the spinach thoroughly and trim off the roots. Blanch in boiling water briefly, then remove and drain. Cut into 2 cm (about 3/4 inch) lengths and place in a dish. While still hot, add salt, sugar, and vinegar, and toss to combine.

2. Fry the peanuts in a pan until cooked, rub off the red skins, place on a cutting board, crush them with a rolling pin, add to the spinach, drizzle with sesame oil, and toss well to combine. This dish features vibrant green spinach with a savory, sweet, and sour flavor, and is rich in protein, essential fatty acids, niacin, vitamins, iron, chlorophyll, and other nutrients.
