Stir-Fried Spinach with White Tofu Puffs

Ingredients

500 g (about 1 lb) spinach, 2 pieces white dried tofu (firm pressed tofu).

Seasonings

40 g peanut oil, 3 g salt, 1 g MSG (or to taste).

Instructions

1. Wash and trim the spinach, then cut into 5 cm (about 2-inch) lengths; rinse the dried tofu and slice into small pieces.

2. Place a wok over high heat and add peanut oil until hot. First, briefly stir-fry the dried tofu, then add the spinach and stir-fry until it turns dark green. Season with salt and MSG, stir a few more times, then transfer to a plate. This dish has a vibrant green color and a fresh, fragrant flavor.
