Pork Liver and Spinach Salad

Ingredients

300 g fresh pork liver, 250 g spinach, 20 g each of rehydrated dried shrimp and fresh cilantro.

Seasonings

Sesame oil, soy sauce, and minced garlic, 10 g each; salt, 3 g; vinegar, 5 g.

Instructions

1. Wash the pork liver, slice it into small pieces, blanch in boiling water until just cooked through, then remove and rinse with cold boiled water, and drain well.

2. Wash and trim the spinach, blanch it, then let it cool. Cut into 2.5 cm (about 1 inch) pieces and drain well. Wash and trim the cilantro, then cut into 1.5 cm (about 1/2 inch) pieces.

3. Place the spinach, liver slices, cilantro, and dried shrimp in a bowl. Add soy sauce, sesame oil, vinegar, salt, and minced garlic, then toss well to combine.
