Tofu with Chinese Toon Leaves

Ingredients

300 g (about 10 oz) tofu, 100 g (about 3.5 oz) fresh tender Chinese toon leaves.

Seasonings

Sesame oil 10 g (about 2 teaspoons), salt to taste.

Instructions

1. Blanch the tofu in boiling water, then cut into 0.7 cm (about 1/4 inch) cubes and place on a plate; pick over and wash the Chinese toon leaves, blanch them in boiling water, squeeze out excess water, finely chop, and scatter over the tofu.

2. Before serving, add salt and sesame oil, then toss well to combine. This dish is soft, tender, and delicious, with a fragrant aroma. It is rich in soy protein, fatty acids, and minerals such as calcium, phosphorus, and iron, as well as abundant amounts of carotene, riboflavin, and vitamin C.
