Ingredients
300 g (about 10 oz) young cucumbers
Seasonings
5 g sesame oil, 2 g salt, 30 g sugar, 15 g white vinegar.
Instructions
1. Wash and scrub the cucumber clean, split it in half lengthwise, then depending on the thickness, cut into long strips and slice diagonally into diamond-shaped pieces. Place in a bowl, add a pinch of salt, toss well, and let sit briefly to lightly pickle.
2. Place the sugar in a bowl, add white vinegar, and slowly stir with a spoon until the sugar dissolves.
3. Gently squeeze the excess water from the salted cucumber, then add it to the sweet and sour dressing and marinate for about 1 hour. Drizzle with sesame oil, toss to combine, and transfer to a serving plate. This dish is sweet, sour, crisp, and tender—very refreshing. It contains calcium, vitamin C, and rich fiber, and helps clear heat, detoxify, and prevent constipation.
