Steps

1. Wash the potatoes, peel them, cut into small cubes, and steam until tender.

2. Heat oil in a wok until hot, add beaten eggs and scramble into pieces, then add ground beef, minced onion, minced garlic, minced ginger, cooked rice, curry powder, ground coriander, ground cumin, ground turmeric, ground cinnamon, ground cardamom, and ground pepper, stir-frying until fragrant. Add salt, diced tomatoes, and diced potatoes, stir-fry until well combined, and serve.
