Yang Jiang Dou Chi Fried Rice (Ginger and Black Bean Fried Rice)

Seasonings

Shrimp 100 g (about 3.5 oz), ham 50 g (about 1.75 oz), 1 egg, 1 tablespoon each diced green bell pepper and diced red bell pepper, a small handful of green peas, and 200 g (about 2 cups) cooked white rice.

Seasonings

2 tablespoons cooking oil, 1/2 tablespoon each minced fresh ginger and fermented black beans, 1/4 teaspoon salt, and a pinch each of MSG and white pepper.

Steps

1. Remove the sand vein from the shrimp, rinse clean; dice the ham into small cubes; crack the eggs into a bowl and beat into an egg mixture.

2. Heat oil in a wok until hot, add the beaten eggs and stir-fry until just set, then add the shrimp, fermented black beans, minced ginger, and diced ham, stir-fry for a moment, then add the steamed rice, diced green bell pepper, diced red bell pepper, and green peas, season with salt, MSG, and white pepper, stir-fry everything until well combined, then transfer to a serving bowl.
