Ingredients

350 g (about 3/4 lb) cooked rice, 100 g (about 3.5 oz) lean pork, 5 eggs.

Seasonings

20 g scallions, finely chopped, 1/2 teaspoon salt, 1/2 teaspoon Shaoxing wine, 2 tablespoons lard.

Steps

1. Rinse the pork and cut it into small cubes; crack the eggs into a bowl, add salt, and beat until well combined.

2. Place a wok over high heat, add lard and heat until hot. First, quickly stir-fry the scallions and diced pork a few times, then add cooking wine and beaten eggs, stir-frying until the eggs form small pieces. Next, add the rice and stir-fry until well combined, then sprinkle with a little salt and briefly stir-fry. Remove from the wok, plate, and serve.
