150 g (about 5 oz) cooked white rice, 100 g (about 3.5 oz) lean pork, 1 egg, and appropriate amounts of barbecued pork, rehydrated wood ear mushrooms, imitation crab sticks, and Chinese broccoli (gai lan).

Chopped scallions and minced ginger, a pinch each; 2 teaspoons Shaoxing wine and soy sauce, 1 teaspoon sugar, a pinch each of salt and MSG (or to taste), 1 tablespoon vegetable oil.

Steps

1. Shred the lean pork, mix with salt and Shaoxing wine, then stir-fry in oil until cooked; spread the beaten egg into a thin omelet, remove and cut into shreds; shred the barbecued pork, soaked black fungus, and imitation crab sticks; slice the Chinese broccoli (gai lan).

2. Place a wok or large skillet over high heat, add vegetable oil and heat until hot. Sauté the minced scallion and ginger until fragrant, then add the shredded pork and cooked rice, stirring well to combine. Season with salt, soy sauce, sugar, and MSG, stirring everything together evenly. Transfer to a bowl and serve.
