Silver Fish Egg Fried Rice

Seasonings

50 g (about 1.8 oz) small silver fish, 1 egg, green beans to taste, a little scallion, 200 g (about 7 oz) cooked white rice.

1 tablespoon cooking oil, 1/4 teaspoon salt, and a pinch each of MSG and white pepper.

Steps

1. Blanch the small silver fish in boiling water until cooked through, then drain well; crack the eggs into a bowl and beat them into a smooth egg mixture; slice the green beans into small pieces and blanch them; cut the scallions into sections.

2. Heat a wok over high flame, add a base layer of oil, pour in the beaten eggs and stir-fry until just set, then add the scallions and white rice and stir-fry for a moment, toss in the whitebait, green bean slices, salt, MSG, and white pepper, and stir-fry everything evenly until well combined and flavorful.
