Beef and Oyster Soup

Ingredients

50 g (about 1.8 oz) fresh oyster meat, 50 g (about 1.8 oz) leafy greens, 250 g (about 9 oz) lean beef.

Seasonings

to taste: cooking wine, salt, MSG, minced scallion, minced ginger, lard, and meat broth.

Instructions

1. Soak the dried oysters in hot water until softened, then drain and replace with fresh hot water once it cools; continue soaking until fully rehydrated, then rinse clean.

2. Rinse the beef, blanch it in boiling water, then drain, rinse again, and slice into thin strips.

3. Heat the wok over the fire, add lard, then sauté the minced scallions and ginger until fragrant. Add the shredded beef and cooking wine, stir-fry until the liquid evaporates. Pour in the meat broth and salt, add the oysters, and simmer until tender and fully cooked. Add the leafy greens and MSG, then transfer to a soup bowl and serve.
