Lamb Liver and Spinach Soup

Ingredients

100 g cooked lamb liver, 250 g spinach.

Seasonings

Cooking wine, salt, MSG (or chicken powder), chopped green onions, shredded ginger, sugar, and peanut oil, all to taste.

Instructions

1. Slice the cooked lamb liver; trim and wash the spinach, blanch it briefly in boiling water, then drain and cut into sections.

2. Heat oil in a wok or pan over medium-high heat, add scallions and ginger and stir-fry until fragrant, then add the sliced lamb liver and stir-fry briefly; season with salt, cooking wine, and sugar, add a small amount of water and continue stir-frying until the liver is well-flavored, then add the spinach and stir-fry just until wilted; adjust seasoning with salt and MSG to taste, then remove from heat and serve immediately.
