Beef Stew with Radish

Learn how to make Beef Stew with Radish, a hearty Chinese dish combining tender beef, daikon radish, and shiitake mushrooms in a savory broth.

Ingredients

6 dried shiitake mushrooms, 2 garlic chives, 500 g (about 1 lb) daikon radish, 750 g (about 1.5 lbs) beef, 100 ml (about 1/2 cup) beef broth.

Seasonings

A small amount of scallions, ginger, sugar, cooking wine, and soy sauce.

Instructions

1. Rinse the beef and cut it into chunks, wash the radish and cut it into irregular rolling chunks, cut the scallions and garlic sprouts into 1-inch sections, slice the shiitake mushrooms, and slice the ginger.

2. Heat oil in a wok, add scallions and ginger, fry until fragrant, then add the beef cubes and stir-fry to remove some moisture, then add soy sauce, cooking wine, and sugar, pour in stock and bring to a boil, then reduce to a low simmer and cook until the beef is about 70% tender, add the radish and continue cooking together, and when everything is cooked through, add the dried shiitake mushrooms and garlic chives, then serve.
