Ingredients
250 g duck liver (about 1/2 lb), 2 eggs, 100 g breadcrumbs (about 1 cup).
Seasonings
Salt, MSG, cooking wine, wet starch, and lard, each to taste.
Instructions
1. Remove any impurities from the duck liver, rinse clean, and slice thinly. Place in a bowl, add salt and cooking wine to marinate. In another bowl, crack the eggs, add cooking wine, salt, and wet starch, and stir until smooth to form an egg batter.
2. Heat the oil in a wok to 350°F (medium-high). Coat each duck liver slice evenly with the egg batter, then press one side into breadcrumbs. Deep-fry until both sides turn golden brown, then remove and serve.
