Ingredients
250 g (about 9 oz) cooked smoked duck
Seasonings
40 g young ginger, 25 g each of red bell pepper and garlic chives, 25 ml vegetable oil, 8 ml soy sauce, 1 g sugar.
Instructions
1. First, debone the smoked duck and cut into 4 cm (about 1.5 inch) long strips, 0.7 cm (about 1/4 inch) thick; cut the ginger into thin strips; cut the sweet bell pepper into 0.7 cm (about 1/4 inch) thick strips; cut the green garlic sprouts into small sections.
2. Add the shredded duck to a wok of oil heated to around 350°F (medium heat) and stir-fry for a few seconds, then add the shredded young ginger, sweet bell pepper strips, soy sauce, sugar, and garlic chive segments, stir-fry until fragrant, then remove from the wok and plate.
