Stir-Fried Shredded Pork with Three Vegetables

Ingredients

200 g celery, cut into strips, 50 g lean pork, 50 g shredded dried tofu.

Seasonings

10 ml vegetable oil, 10 ml soy sauce, 3 g salt, 2.5 g shredded scallion, 2.5 g shredded ginger, cooking wine to taste, cornstarch to taste.

Instructions

1. First, cut the lean pork across the grain into thin shreds, then mix with a marinade made from cornstarch, soy sauce, salt, and cooking wine to taste.

2. Heat oil in a wok, first add scallions and ginger, then add the shredded pork and stir-fry over high heat until about 80% cooked; remove from heat, set aside. In the same wok, stir-fry the celery and tofu strips until about 80% cooked, then return the cooked pork to the wok along with the remaining soy sauce and cooking wine. Stir-fry over high heat until everything is fully cooked, then serve.
