Salted Egg and Mustard Green Soup

Ingredients

2 salted duck eggs, 150 g (about 5 oz) mustard greens.

Seasonings

MSG, soy sauce, and fresh broth, each to taste.

Instructions

1. Trim and wash the mustard greens, then cut into sections; crack the salted duck egg into a bowl.

2. Bring the fresh broth to a boil in a pot, first add the egg yolks and bring to a boil again, then add the mustard greens, MSG, and soy sauce, bring to a boil, pour in the egg whites and cook until done, then remove from the pot and serve.
